I don’t love eating salads in the winter time because they are usually raw, cold, and give me a sense of lightness. What I’m really craving is something cooked, warm, and grounding in this 20 degree Chicago weather. I find it’s nice to balance my hot, cooked, meals with some freshness every once and a while, especially, as we move into spring.
The Winter Kale Salad is great in colder weather because it’s comprised of nuts (a source of good fats), cranberries (which are the berries of winter) for sweetness, and can be made heartier by topping with your choice of grains or protein (like quinoa or chicken).
Even the chili pepper in the dressing gives the salad a little bit of spice and heat which helps make the salad more “warming.”
